I come from HK. It’s far, far too common to see men and women with double eyelids.Actually, those with monolids are the minority. The guy in the picture below is me.

As to why some people call monolids “Chinese eyes”, you’ll have to ask them. I find it extremely challenging to think like a stupid person, so you’ll definitely have to ask them.My guess is, they probably think all Chinese look alike, and that all 1.5 billion Chinese people around the world look like:

Monolid is an adaptation to cold snowy climate. It has only became more common in Korea, Northern Europe and Northern East Asia during the Ice Age. Southeast Asians and Southern Chinese who were unaffected by Ice age mainly have double eyelids and rounder eyes.

Chinese generally have more ancestry from the South. So, they can have more double eyelids than the others. And because of historical migration and mixing, there are many East Asians with double eyelids.
